A taverna is not just a simple restaurant where you can have dinner fast and leave. It is the place where people gather on an everyday basis and stay for hours chatting, meeting other people and friends, even having colorful arguments all in the middle of dinner and wine. It is essentially the center of nightlife activity in Greece and what defines a lot of things about the Greek culture.
Panos wanted to recreate that atmosphere while adapting to the needs and desires of the local community to bring out the best of his two different "homes". It's not only the well thought food that will instantly grab you but the colors and decorations of the taverna, a setting which took Panos many years to build, mostly carrying specialty items in his suitcases from his trips to Greece every year.
